Description
Château d’Yquem in Sauternes was the only estate ranked Premier Cru Supérieur in 1855. Sémillon and Sauvignon Blanc affected by noble rot are picked berry by berry in successive passes, and in years judged unworthy no Yquem is released at all.
The vintage 1996. 1996 gave fresh, finely balanced Sauternes with lively acidity under the richness.
Apricot, candied orange, pineapple, saffron, honey and vanilla, with a seam of acidity that keeps the richness fresh. With age the colour deepens to amber and crème brûlée, marmalade and spice notes take over. The finish seems endless.
Service & pairing. Serve at 10–12 °C. Classic with foie gras, Roquefort, blue-veined cheeses and apricot or tarte Tatin; also remarkable with spiced dishes or simply on its own.
